mint lemonade

Fresh From Our Kitchen is a new blog post section that we’ll be posting periodically.  It will highlight recipes that anyone can use on any budget to bring fresh new ideas to their kitchen.

Over the last three summers, mint has grown wild in our garden here at the Food and Care Coalition and this recipe has been a great way to use the bounty of our garden in a fresh and refreshing way.

Mint Lemonade (serves 6)
Ingredients:
1 cup water
1 cup white sugar
1 cup chopped mint leaves
6 cups ice
4 cups prepared lemonade (pink or yellow)
Fresh mint sprigs for garnish
Fresh lemon wedge for garnish

Directions:
1. In a small saucepan, combine the water, sugar, and chopped mint.  Stir and bring to a boil.  Cook until sugar has dissolved and then remove from heat and let cool for about an hour.  After cooling, strain out mint.

2. Fill blender with ice, lemonade, and mint syrup (prepared in step 1.)  Blend until the ice is finely crushed.  Pour and serve, adding mint and lemon wedges for garnish.

3. Enjoy!
